Carrot Cake

Carrot cake is a cake which consists of grated carrots mixed with batter. The carrot softens in the cooking process, and the cake usually has a soft, dense texture. The carrots themselves enhance the flavor, texture and appearance of the cake.
 
 
 

INGREDIENTS
  • Flour                                   2 cups
  • Baking powder                    2 tsps.
  • Baking soda                        1½ tsps.
  • Cinnamon, powder              2 ½ tsps.
  • Eggs                                   4 nos.
  • Sugar                                  2 cups
  • Carrots, grated                    2 ¾ cups
  • Pineapple, crushed              1 can
  • Walnuts, chopped                ¾ cup
  • Coconut, grated                   1 cup
  • Oil                                       1 ½ cups
  • Salt                                      1 tsp.

METHOD

1.Sieve/sift the flour, baking powder, soda, salt &
cinnamon powder.


2.Mix the oil, sugar & eggs in a large bowl.


3.Then add the flour mixture a little at a time to
the egg mixture, mixing well after each addition.


4.Add carrots, pineapple, nuts, coconut and mix well.


5.Pour this mixture into a greased cake tin & bake at
350 ยบ C for 35-40 minutes.


6.Before removing the cake from the tin let it cool
for at least 10 mins.


7.Will stay for at least a week in the fridge.
