Beetroot Salad is an excellent sweet and sour salad of Mediterranean taste, full of iron and vitamin A.
INGREDIENTS

1. Boil the beetroots.
2.When cool, peel and dice them into 1/2" cubes and chill them.
3.Mix orange juice, oil, salt, pepper, mustard powder and
orange rind together in a bowl.
4. Pour the dressing over the beetroot pieces and garnish with rings of spring
onion.

- Orange juice ¼ cup
- White pepper powder ¼ tsp.
- Mustard powder ¼ tsp.
- Orange rind ½ tsp.
- Spring onion rings ¼ cup
- Salad oil 1 tbsp.
- Salt to taste
