Zarda

Zarda is the traditional Pakistani dessert made of rice cooked in sugar syrup.this dish is mostly prepared on occasions and festivals.







INGREDIENTS

  • Delhi rice                            2 cups
  • Milk                                   4 cups
  • Cardamom seeds               1 tbsp.
  • Saffron essence                  ½ tsp.
  • Sugar                                4 tbsps.
  • Fresh rose petals               A handful
  • Almonds blanched              25 gms.
  • Pistachios blanched            25 gms.
  • Cashew nuts                       25 gms.
  • Raisins                               25 gms.
  • Silver warq                        As required
  • Ghee                                 3 tbsps.
  • Salt                                    to taste

METHOD

1. Heat the ghee and lightly fry the raisins and keep aside.


2. To the remaining ghee add the cardamom seeds, followed by the rice and fry
for 5 minutes.


3. Next add the milk, sugar and rose petals.


4. Cook on a low flame with a cover lid till the rice is tender and almost dry.


5. Now carefully stir in the nuts, raisins and saffron essence.


6. Cover with lid again and cook till the rice is fully dry.


7. Remove from flame and cover with the silver warq.


8. Serve hot.
